Delicious Green Smoothie Muffins, 5 Easy To Follow Steps

While endlessly searching for alternatives to a standard smoothie, such as the popular blueberry smoothies (read my personal recipe here if you are interested), I came across green smoothie muffins.  These muffins are super easy to make, a quick snack that fills you up, and my go-to on the go snack.  After making the green smoothie muffins a few times, I have tweaked it a bit and have come up with this recipe.  Let me know what you think and I hope you love this recipe!

Easy Green Smoothie Muffins Recipe:

(I will always write both American/Metric system measurements)

3 ripe bananas

10 strawberries

2 cups of baby spinach, packed

1 1/2 cups flour (preferably whole wheat flour): 3 1/2 dl

3/4 cups sugar (preferably raw sugar): 1 3/4 dl

1 egg

1/4 cup canola oil: 1/2 dl

2 teaspoons cinnamon

1 teaspoon baking soda

1/4 teaspoon salt

Step 1) Prepare The Good Stuff

Smoothie-lovers! First begin by preheating your oven to 350 degrees fahrenheit: 175 degrees celsius.

Now, get out all of the ingredients you will need and get organized. You should have bananas, strawberries, spinach, flour, sugar, egg, canola oil, baking soda, salt and cinnamon ready.

Step 2) Dry Ingredients Get Together

Get out a medium sized mixing bowl; combine the dry ingredients together in your bowl. Mix together: wheat flour, sugar, egg, canola oil, baking soda, cinamon and salt.  The mixture will be crumbly at this point :)

Step 3) Blender Time! (Ninja Those Veggies!)

Next, get your blender or food processor ready.  Cut off the stems of the strawberries and then blend together the strawberries, bananas and spinach in a blender or food processor.  Blend the green mixture until the mixture is pureed.

Step 4) Combine & Mix: Smoothie Part Completed

Now add the puree from the blender, to the dry crumbly mixture and mix together.

Step 5) Bake It And Enjoy The Aroma in The Whole House

In a muffin pan, line it with muffin tins and put 2/3 of mixture in all of the muffins.  There should be about 15-17 muffins.

Put the muffins in the oven for 20 minutes, or until a toothpick will come out clear.

The muffins should look a little something like this :)
